Truffles are edible spores that grow on an underground fungus in the family of Tuberaceae. They’re often confused with mushrooms, but they're technically not the same species — mushrooms grow above ground, while truffles grow underneath the surface. Considered a gourmet delicacy by many in the culinary world, truffles are extremely hard to source and lose their potency quickly once they’ve been harvested. These factors make them one of the most expensive foods in the world. Depending on the variety, Italian white truffles are generally the priciest, they can sell for as much as $4,000 a pound. Truffles are best enjoyed when they are fresh, and the longer they are exposed to air the faster their aroma and taste fade.

Truffles’ two worst enemies are time and moisture. Truffles emit their aroma continually until it is totally exhausted; the rate accelerating on exposure to air. Either the strong pervasive truffle aroma vaporises and disappears or it permeates any other absorbent items kept in close proximity. At the same time the truffles will also dehydrate. Considerable care is thus required with their storage. For the short-term storage of your truffles, it is best to refrigerate them at a temperature of 35.5°F – 37.5°F (2°C - 3°C). Prior to refrigeration, they should be individually wrapped in paper towels, and stored in an airtight container. The paper towels absorb water, so you should make sure to change the paper towels at least daily, if not more often.
