For pelagic-caught food, freshness can be summarized in two words: temperature-controlled. Take tuna for example. Many people have eaten sashimi and know that the best sashimi is tuna fillet. Tuna meat is delicate and fatty, red and bright in color. However, one characteristic of tuna is that it requires very high storage conditions, and the temperature requirements are particularly harsh. In order to ensure that the tuna is delivered to the table in the best quality, a very comprehensive cold chain system is required. As we know, the attractive red color of tuna meat is originated from the hemoglobin in it, and the fish meat is easy to oxidize and change color in the air. In order to ensure the freshness of the fish, and at the same time to avoid the cells being pierced by the expanding ice crystals affecting the taste, tuna must be sent to the cold storage on board the ocean-going vessel soon after it is caught and quickly cooled down to below -50℃, in order to maintain the best color and taste

After the tuna is bled, finned and gilled, the tuna is then put into the ultra-low-temperature rapid freezing room, where dozens or even hundreds of kilograms of tuna are frozen completely within 10 hours, with the center temperature of the fish body gradually dropping to -60℃, and the water in the fish body is completely solidified, which prevents changes in the quality of the fish due to fluidity, and ensures the quality of the fish meat. It also ensures the color of the fish to avoid browning and acidification of the tuna. After the above short treatment, the tuna must be frozen at -55℃ in every step of the process, including landing, warehousing, distribution and terminal storage.
