How to preserve honey ?   Multi-use Temperature and Humidity Data Logger

Honey is a product sensitive to temperature and humidity.

Honey moisture is one of the most common problems experienced by beekeepers.

Moisture has a major influence on fluidity, crystallisation and, above all, on the risk of fermentation. A number of techniques are needed to control and avoid excessive humidity problems.

Honey functions as a sponge, because it is hygroscopic. It will pump the humidity from the surrounding air. Beekeepers should ensure that honey is treated in a dry environment. The honey house, storeroom and packing area should all be protected from moisture.

The surface humidity of honey stabilizes at :

- 16.3% in a room with a relative humidity of 55%.

- 18.3% in a room with a relative humidity of 60%.

- 20.9% in a room with a relative humidity of 65%.

Like all solar products, honey does not like cold temperatures lower than 9°C. So it's best not to keep it in the fridge, especially if unopened, as it may harden. It is also discouraged from storing it at very high temperatures. Ideally, honey should be kept at room temperature, which should not exceed 25°C.

We recommend keeping honey in a closed jar in a dry environment, away from light and at a temperature between +15°C and +25°C.
